What is a typical meal in Colombia? It depends on the region. One of our favorites is Arroz con Pollo. It is a type of rice mixed with chicken and vegetables. On Sunday night we were able to prepare this meal and share it with a group from the St. Louis Covenant Church Plant. This is a church that has supported us for years and it was a great evening of reconnecting with people over a Colombian meal. Julio and I don’t typically cook for 30 people, so it’s always a challenge figuring out the recipe and proportions. But, the meal came out delicious with help from the pastors who diced onions and helped to shred the chicken. We were grateful for the opportunity to share a piece of Colombia through food and stories.
