One of the classes we have been teaching at RFIS this year is an agriculture class. Part of the class was for the students to run a small business enterprise. They tried growing some crops with limited success but their chicken operation was much more successful – especially their second round of raising the chicks. After raising them, the grown chickens were sold to the community either as live birds or as butchered meat. I opted for having them butchered, cleaned and plucked.
You will see below the process – please note these pictures do show how the chickens get from walking about their pen to being ready to go into my oven.
The resulting chickens have been delicious!
