{"id":2339,"date":"2008-08-22T20:50:28","date_gmt":"2008-08-22T20:50:28","guid":{"rendered":"http:\/\/blogs.covchurch.org\/newswire\/?p=2339"},"modified":"2010-12-22T12:22:12","modified_gmt":"2010-12-22T17:22:12","slug":"6531","status":"publish","type":"post","link":"http:\/\/blogs.covchurch.org\/newswire\/2008\/08\/22\/6531\/","title":{"rendered":"NPU Cafeteria Becomes a Tray-free Zone"},"content":{"rendered":"<p>CHICAGO, IL (August 22, 2008) \u2013 <a href=\"http:\/\/www.northpark.edu\/home\/\" target=\"_blank\">North Park University<\/a> and ARAMARK, the school\u2019s food service provider, hope to save thousands of dollars, positively affect the environment, and improve students\u2019 health by removing trays from the cafeteria.<br \/>\n<!--more--><br \/>\nAn ARAMARK study of 186,000 meals at 25 colleges and universities of different sizes found a 25-30 percent reduction in food waste per person on \u201ctray-less\u201d days. The cost of water used to wash the trays went down between 1.8 cents and 4.4 cents per gallon.<\/p>\n<p>When the company implemented the change at the University of Maine\u2013Farmington, a school similar in size to North Park, they found the following positive results:<\/p>\n<ul>\n<li>Food waste reduced by 46 pounds per person each year<\/li>\n<li>Overall waste reduced by 65,000 pounds<\/li>\n<li>Water consumption reduced by 288,288 gallons<\/li>\n<li>Healthier eating habits supported through portion control<\/li>\n<li>Awareness about food waste increased<\/li>\n<li>Costs reduced an estimated $57,000<\/li>\n<\/ul>\n<p>\u201cWe take a stewardship mentality to everything we do,\u201d says Carl Balsam, North Park\u2019s executive vice president and chief financial officer. \u201cAs a campus that is informed by Christian values, we must take the lead in becoming good stewards of the earth.
